3 1/2 c sifted flour
3 c sugar
2 t baking soda
1 t ground cinnamon
1 t nutmeg
1 1/2 t salt
4 eggs, beaten
1 c oil, veg or canola
2/3 c water
2 c canned pumpkin (rounding up is OK)
Walnut halves (optional)

Directions:
Directions:
Sift flour, sugar, baking soda, spices and salt (don't skip, it makes a big difference!)
In a separate bowl combine eggs, oil, water, and pumpkin
Mix well
Stir into dry ingredients
Turn into 3 greased loaf pans and top with walnut halves
Bake @ 350 degrees until cake tester comes out clean, approx 45-55 min
Cool and refrigerate
(Freezes well)
