1½ cup of uncooked rice
4 cups of milk - divided
2/3 cups of white sugar
1/2 tsp of salt
2 eggs, beaten
1 cup of raisins
2 Tbl butter
1 tsp vanilla extract

Directions:
Directions:
1. Bring 3 cups of water to a boil in saucepan; stir rice into boiling water. Reduce heat to low, cover, let simmer for 20 minutes.

2. In a clean saucepan, combine 3 cups of cooked rice, 3 cups of milk, sugar and salt. Cook over medium heat until thick and creamy stirring often; about 20 minutes. Stir in remaining milk, beaten eggs and raisins; cook 2 minutes more stirring constantly. Remove from heat and stir in butter and vanilla.

Sprinkle with cinnamon if desire when serving.
