1 - Tablespoon Olive Oil
3 - Tablespoons Chili Powder
1 - Tablespoon Ground Cumin
5 - Fresh Jalapeno Peppers sliced in to small pieces
1 - Fresh Large Red Bell Peppers sliced in to small pieces
1 – Fresh Ear of Corn – Cut Corn off the Cob
2 - Tablespoons salt
1 - Tablespoon Black Pepper
2 - Pounds Lean Ground Beef
1 - Large Yellow Onion Peeled and diced
10 - Cloves of Garlic minced
3 - Chipotle Chili Peppers in Adobo Sauce, chopped
1 - (15 oz.) can Dark Red Kidney Beans, rinsed
1 - (15 oz.) can Black Beans, rinsed
1 - (15 oz.) can Great Northern Beans, rinsed
2 - (15 oz.) cans tomato sauce
2 - (15 oz.) cans diced tomatoes
1 - (4 oz.) can chopped green chiles
1 - bottle of beer (Modelo or Corona)

Toppings and Add-Ons -
2 Cups of Basmati Rice
Shredded Cheddar Cheese
Sour Cream
Salsa
Chopped White Onion
Chives Chopped
1 - Jar Sliced Jalapenos

Directions:
Directions:
In a large frying pan sauté the onions until lightly browned. Add chop meat and garlic and brown. Drain off half the fat and discard when browned. Put meat mixture and all remaining ingredients in crockpot. Cook in crockpot on low for 6 – 8 hours or on high for 3 – 4 hours. Stir hourly and be sure to scrape bottom every time to be sure that no meat of vegetables are sticking to the bottom which if permitted to continue to be there, will burn and ruin the chili!
