4 Chicken Breasts (Skin On)
3 Ribs of Celery
2 Garlic Cloves
1 Large Onion

1 28oz. Can of diced Tomatoes; un-drained.
1-2 Chicken Bullion Cubes
2 Carrots, Sliced
½ tsp. Cumin
¼ tsp Cayenne Pepper
¼ tsp. pepper

10oz. Frozen Corn
1-Can Black Beans; drained
1-2 Bunches Scallions; thinly sliced
Cilantro to taste
2 Cups Cooked Rice

Directions:
1. Add all ingredients in first grouping to a large stockpot; Cover with water and bring to a boil. Reduce heat and simmer on low for 1 hour.. Remove chicken and let cool... skim fat from soup.
2. Now add ingredients in second grouping. Simmer for 30 minutes.
3. Add ingredients from 3rd. group, except for rice. Simmer 10-15 minutes more, then add skinned and boned chicken cut into bite size pieces, the 2 cups of cooked rice.(you can use a lesser amount of uncooked rice and cook until tender, however it will reduce the amount of your broth.)

Heat thoroughly and ladle into bowls...Everyone garnishes their own bowl with shredded cheese, tortilla chips and hot sauce.
