1 cup vegetable shortening
1 ½ cups sugar
2 eggs
1 teaspoon peppermint extract
3 ½ cups sifted flour
1 teaspoon salt
1 teaspoon baking powder
2 squares chocolate, melted

Directions:
Directions:
Blend shortening, sugar, and eggs with peppermint extract. Sift together dry ingredients and add to first mixture. Blend well and divide dough into two parts. Stir melted chocolate into half of the dough. Chill. After chilling, roll each portion of dough to ¼ inch thickness on a floured board or pastry cloth. Place chocolate layer on plain layer and roll as for a jelly roll. Chill in refrigerator about 1 hour. Cut in ¼ inch slices and place on cookie sheets. Bake in a moderately hot oven (400°F) for 10 to 12 minutes. Makes 4 dozen cookies.
