1 cup Fuyu persimmon pulp/puree
1 tsp. baking soda
1 large egg, beaten
1 cup sugar
1/2 cup oil
1 cup raisins
1-1/2 cups flour
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
1/4 tsp. ground cloves
1 cup chopped walnuts










Glaze:
1 cup powdered sugar
2 T. lemon juice

Directions:
Directions:
Stir together persimmon pulp and baking soda; set aside. Mix together egg, sugar, oil and raisins. In a large bowl, combine and mix dry ingredients. Stir persimmon mixture and egg mixture into dry ingredients. Fold in walnuts. Spread batter into a greased 10 x 15 jelly roll pan. Bake at 350º F for 20 minutes. While baking, combine glaze ingredients and stir until sugar is dissolved. Remove pan from oven and spread with glaze. Cool in pan and cut into bars. Note: To make persimmon puree, remove tops of persimmons with butter knife. Cut into quarters and puree in a blender.
