BBQ Sandwiches

½ pork loin, boneless
1 c Tom's BBQ sauce
8 hamburger buns
Cole slaw

Directions:
Directions:
Preheat oven to 350º.

Place pork in a 9x13 inch baking dish, cover with foil. Bake for 2 hours or until very tender. Remove from oven.

When cool enough to handle, shred meat with a fork. Return to baking dish, stir in Tom's BBQ sauce. Cover and refrigerate for several hours. When ready to serve, reheat pork in oven.

Serve warm on buns with cole slaw and additional BBQ sauce.

Note: There are several ways to reheat the meat. You want to be careful to not dry it out. Some suggestions are:
1. In the oven at 350º, soak a paper towel with water, lay on top of pork. Cover with foil. Put in oven. After about 15 minutes, remove and stir. If not hot enough recover and return to oven for 10 minutes. Check again.
2. Place in microwave safe dish. Top with a wet paper towel. Microwave on high for 3 minutes. Remove and stir. If not hot enough recover and heat additional time.
3. Put meat in large skillet on top of the stove over medium heat, add a little bit of water. Stir often.
4. Place in crockpot, set temperature to medium low. Stir occasionally. When warm turn to lowest setting.
 

Tom's BBQ Sauce

1 gallon cider vinegar
8 oz salt
1 c brown sugar, packed
6 lemons, each lemon cut into 8 pieces
1 oz black pepper
1 oz cayenne pepper
3 oz hot sauce
1 small bottle ketchup

Directions:

Combine all the ingredients in Dutch oven or soup kettle. Bring to a boil. Reduce heat and simmer 1 hour. Remove the lemon slices.

Notes: Sauce makes enough for about 200 servings.

Three BBQ recipes in this cookbook. But they are all so good!

The BBQ sauce is a lot like Pigman's. Some notes from Tom: Use caution, inhaling the fumes, guaranteed to clear the sinuses!!! Also - this is enough sauce for a "pig picking". I typically quarter the recipe.

And final note - this is a bridge party favorite served over canned peaches. (See Lessons Learned the Hard Way).
