1 large egg, room temperature
1/2 cup sugar
1-1/2 tsp. vanilla
1-1/2 cups Fuyu persimmon puree (see note)
5 T. unsalted butter, melted
1 tsp. baking soda
1/8 tsp. salt
1 tsp. cinnamon
1-1/2 cups flour
3/4 cup chopped walnuts, toasted
1/2 cup raisins

Directions:
Directions:
Whisk together egg, sugar, and vanilla. Add persimmon puree and melted butter and mix well. Combine dry ingredients and whisk into persimmon mixture until blended. Fold in nuts and raisins. Pour batter into a greased 8 x 4 loaf pan. Bake at 350ºF for 45 to 50 minutes or until toothpick inserted near center comes out clean. Cool in pan 10 minutes and then turn out onto wire rack to cool completely. Note: To make persimmon puree, remove tops of persimmons with butter knife. Cut into quarters and puree in a blender.
