8 slices bacon, diced
1 medium onion, chopped
4 T butter
1 c pecans, coarsely chopped
1½ c white rice, uncooked
1 tsp salt
2¼ c cold water
2 T fresh parsley, chopped

Directions:
Directions:
Sauté the bacon in a large skillet until almost crisp. Add the onion and sauté lightly. Remove the bacon and onion and set aside. Drain off all but 2 T of drippings from the pan.

Add the butter to the drippings and sauté the pecans over medium heat until they are fragrant. Remove the pecans and set aside.

Stir the rice and salt into the pan, coating the rice well. Add the cold water; stir and bring to a boil. Simmer, covered for 25 to 30 minutes or until the rice is tender and the liquid is absorbed. Stir in the bacon, onions, pecans and parsley. When heated through, transfer to serving dish.
