Crust
1 stick butter
3 oz cream cheese (softened)
1 c flour


Filling
¾ c brown sugar
¾ c chopped pecans
1 t vanilla
1 egg

Directions:
Directions:
Crust:
Combine and mix all crust ingredients together. Roll to form balls to fit into mini muffin tin. Press each ball into the tin, using you finger or thumb to create a well and pressing gently up the sides. You will have a “pie crust”.

If dough is to sticky, refrigerate and work in batches.


Filling:
Combine brown sugar, vanilla, and egg. Beat together. Fold in chopped pecans. Pour filling mixture slowly into each mini muffin crust. You can top off once on the oven rack if necessary.

Bake 325 for 20 minutes. Cool before removing from the pan.
