2 ¼ cups sifted cake flour
1 1/3 cups sugar
2 ¾ teaspoons baking powder
¾ teaspoon salt
½ cup shortening
1 cup milk
1 teaspoon vanilla
½ teaspoon lemon juice
3 egg whites, stiffly beaten
2/3 cup shredded coconut

Directions:
Directions:
Preheat oven to 350°. Grease and flour pans. Sift flour, sugar, baking powder and salt. Add shortening, 2/3 cup milk, vanilla and beat 2 minutes. Add 1/3 cup milk, lemon juice and beat 2 more minutes. Fold in egg whites and coconut; pour into prepared pans. Bake in two 8 inch layer pans 30-35 minutes or in one oblong pan 35-40 minutes. Frost with Seven Minute Frosting and sprinkle with coconut.
