2/3 cups cooked checked, diced
4 hard boiled eggs, chopped
2 cups cooked rice
1 1/2 cups chopped celery
1 small onion, chopped
1 cup mayonnaise
2 cans of cream of mushroom soup
3 ounces slivered almonds
1 t salt
Pepper to taste
2 T lemon juice
1 cup bread crumbs, I used panko
2 T butter


Directions:
Directions:
Mix all ingredients except bread crumbs and butter. Place in butter 9x12 baking dish. Brown bread crumbs lightly in melted butter. Sprinkle over casserole, refrigerate overnight (Or all day). Remove from fridge 1 hour before baking. Bake 350 for 45+ minutes or until bubbly on edges. Serves 8 generously.
