6 boneless chicken breasts
½ c soy sauce
¼ c dry sherry
2 T vegetable oil
1 T ginger root, grated
1 T sugar
4 cloves garlic, minced

Directions:
Rinse the chicken and pat dry. Arrange in non-aluminum dish or large Ziploc bag. Combine the remaining ingredients. Mix well. Pour over chicken, turning chicken to coat. Marinate, covered, in the refrigerator 6 hours or longer, turning occasionally. When ready to cook, drain the marinade from the chicken.

Prepare a medium-hot fire in a charcoal grill or preheat gas grill. Oil the rack.

Pat chicken dry and place on the rack. Grill, turning occasionally, for 30 minutes or until chicken is tender and when pierced juices run clear.

Serve hot or cold.

Serving ideas: Great with fresh grilled pineapple slices!!

To prepare the grilled pineapple, with sharp knife cut off outer layer. Cut into slices about ½ inch thick. During last 15 minutes of grilling time place the pineapple slices on the grill. Turn after about 6 minutes. Continue grilling 5-6 more minutes.
