6 eggs
1 cup chopped spinach
12 cherry tomatoes, halved
1/3 cup diced red bell pepper
1/2 cup diced green bell pepper
1/2 cup green onions finely chopped
1/2 cup grated Cheddar cheese (about 2 ounces) plus more for topping
1 T salt
1 tsp. pepper
6 slices bacon

Directions:

Preheat the oven to 300 degrees.
Grease a 6 - cup muffin tin with butter or coconut oil.
In a medium-sized bowl, mix together the eggs, spinach, tomatoes, bell peppers, green onions, cheese, salt and pepper.
Wrap a slice of bacon around the inside of each muffin space.
Fill each muffin cup about three quarters full with the mixture.
Top with cheese
Place in the oven and bake for 20 minutes or until gold brown.
Remove from the oven and let cool for 10 minutes before serving.
