Place 1 or 2 T Kerry Gold butter in Pan
Fry: onion, pepper, spinach, bacon bits, tomato, mushrooms anything you want!
Mix 3 eggs with salt and pepper in a bowl I add a little cream.

Once the veggies are cooked.
I move them to the side or take them out and cook the egg mixture.
When it starts cooking I tip the pan so the egg that hasn't cooked yet gets a chance..
Add the veggies back in.
Fold over and cover with cheese.
Turn off oven and place a lid on it so the cheese can melt and eggs can cook more thoroughly.
Once you put it on your plate slice an avocado on it and serve it with salsa or reduced sugar ketchup.
