1 C. onion, chopped finely
1 C. sliced mushrooms
1 TBS oil
10 oz spinach, sliced fine*
2/3 C. ham (or cooked bacon)
5 eggs
3 C. shredded cheese (your favorite)
Directions:
Directions:
Sauté onions, and mushrooms in oil. Add spinach and ham. Cook 3-5 minutes. Cool. In separate bowl, beat eggs. Stir in cheese. Stir in spinach mixture. Pour into glass pie plate. Bake at 350 for 40-45 minutes. Serve warm.
*Can use frozen spinach- thawed and drained
