2 eggs
½ cup shortening
1½ cups sugar
3 crushed, ripe bananas
½ cup buttermilk
1 teaspoon baking soda
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract

Directions:
Directions:
Beat together sugar and shortening. Add eggs and vanilla. Add crushed bananas and mix thoroughly. Dissolve soda in buttermilk. Sift together the flour and baking powder, add alternately with buttermilk & baking soda. Beat well. Bake in three 9" layer pans 20 minutes at 325º, or in a 9x13 pan about 40 minutes, or until a toothpick inserted in cake comes out clean.

1 cup evaporated milk
1 cup sugar
3 egg yolks
½ stick margarine
1 teaspoon vanilla extract
1 cup pecans

Directions:

Mix first four ingredients in saucepan, cook and stir over medium heat until mixture thickens (about 10 minutes). Remove from heat and add vanilla and nuts. Beat until frosting is cool. Spread between layers and on top. Sprinkle with coconut if desired.

This recipe was given to me by my mother-in-law many, many years ago. She lived in Fayetteville, Arkansas and I believe she found this recipe in her local newspaper. We have enjoyed it many times down through the years.
