4 medium yams or sweet potatoes, peeled and cut into 3/4 inch chunks
1 large purple onion, cut into large pieces
2 tablespoons olive oil
4 cans black beans, seasonings added to taste (garlic powder, onion powder, chili lime seasoning, curry powder, salt and pepper)
Chili Lime Seasoning (Trader Joe's), to taste
2 medium ripe avocados, cut into large pieces
1 fresh jalapeño, minced
1 bunch fresh cilantro, rinsed and coarsely chopped, stems removed
4 limes, rinsed and cut into wedges
1 bag shredded cabbage
1 cup sliced black olives
2 small cartons crumbled feta cheese
1 jar or two small refrigerated tubs of salsa verde
1 container sour cream
Favorite hot pepper sauces, if desired

Directions:
Directions:
Preheat oven to 425º. In a medium bowl, toss together the sweet potatoes and purple onion with olive oil. Spread on large, rimmed baking sheet and sprinkle with salt, pepper and chili lime seasoning. Bake for about 30 minutes, stirring several times during roasting. When tender, turn off oven and keep warm in oven until serving time. Meanwhile, in a saucepan over medium/low heat, heat the black beans, adding seasonings to taste. Keep warm in pot until all is ready to serve. Put the roasted sweet potato and onions, cut avocados, minced jalapeños, chopped cilantro, lime wedges, shredded cabbage and sliced olives into serving bowls. Put out feta cheese, salsa verde, sour cream and hot pepper sauce.

Allow people to create their own bowls, starting with black beans and sweet potatoes and adding all other ingredients, as desired. Yum!!
