1 ½ sticks unsalted butter, diced
2 cups all-purpose flour
¼ cup packed light brown sugar
½ cup confectioner's sugar, plus more for garnish
¼ t salt

Filling
4 large eggs, plus 2 egg yolks
2 cups sugar
⅓ cup all-purpose flour, sifted
1 t grated lemon zest
1 cup fresh lemon juice

Preheat oven 350º degree F. Grease a 9 by 13 inch pan with nonstick spray. Then line with parchment paper in the pan, leaving a 2 inch overhang on all sides, to help take the bars out easier

Using a food processor, pulse the butter, flour, both sugars and the salt until the dough comes together. Press evenly into the bottom of the pan and ½ inch up the sides of the pan. Make sure you have not cracks in the crust. Bake 25 minutes until the crust is golden.

While the crust is cooking make the filling. Whisk the whole eggs and yolks, add sugar and flour mix until smooth. Mix in the lemon zest and juice.

Once crust is out of the oven change temperature to 300º. Pour the filling over the warm crust and return to the oven. Bake until the filling is just set, about 30 to 35 minutes.

Leave bars in the 9 by 12 pan to cool. Next place in the refrigerator until firm, around 2 hours.

Lift out of the pan using the parchment paper, slice and serve with a dusting of confectioners sugar before serving.
