½ Cup Butter softened
1 Cup Sugar
2 eggs
1 t vanilla extract
2 cups all-purpose flour
1 t baking soda
½ t salt
1 cup mashed ripe bananas (about 3 cups)
1 can (11 oz) mandarin oranges, drained
1 ½ cup flaked coconut
⅔ cup sliced almonds, divided
1 jar of chopped maraschino cherries

In mixing bowl cream butter and sugar. Beat in eggs and vanilla. Combine the flour, baking soda and salt in a separate bowl. Add the flour mixture to the creamed mixture a small amount at a time. Also add the banana with the flour mixture. Stir in oranges, coconut, 1/2 cup of almonds and cherries.

Pour batter into 2 greased 8in x 4 in x 2 in loaf pans. Sprinkle bottom of plans with remaining almonds.

Bake at 350º for 50-55 minutes or until a toothpick inserted near the center comes out clean. Usually it takes about an 1hour 15 minutes at least.

Cool for 10 minutes before removing from pans to cool.
