1¼ lbs. beef chuck, cut in 1-inch cubes
1 tbsp. oil
1½ tbsp. all-purpose flour
¼ tsp. chili powder
2 cloves garlic, minced or pressed
1 medium onion, sliced
1 can (10½ oz.) condensed beef broth
1 broth-can water
¼ tsp. dried oregano leaves
4 medium potatoes, peeled, sliced
2 medium carrots, peeled, sliced

Directions:
Directions:
Heat oil in Dutch oven.
Toss beef in mixture of flour, salt and pepper.
Brown well on all sides in the hot oil.
Add chili powder, garlic and onion. Sauté lightly.
Add beef broth, water and oregano.
Bring to a boil. Cover. Reduce heat and simmer for about 1 hour stirring from time to time.
Add vegetables. Simmer for another 20 minutes or until meat is tender and vegetables are tender crisp.
