3 lbs. small red potatoes, cut in halves or quarters
1/4 cup olive oil
1-1/2 tsp. kosher salt
1 tsp. pepper
2 T. minced garlic (6 cloves)
2 T. minced fresh parsley

Directions:
Directions:
Combine olive oil, salt, pepper, and garlic. Add potatoes and toss until the potatoes are well coated. Transfer potatoes to a flat pan covered with foil. Spread out into 1 layer. Roast in 400ºF oven 45 minutes to 1 hour until brown and crisp. Flip twice during cooking to ensure even browning. Remove from the oven and toss with parsley, season to taste and serve hot.
