16 oz. cooked elbow or spiral macaroni
6 tbsp. butter
½ c. minced Vidalia onion
½ c. flour
5 c. whole milk
1 c. evaporated milk
6 c. cheese in total:
3 c. Vermont Cabot Seriously Sharp Cheddar
1 c. fresh shaved parmesan
1 c. Gruyére
1 c. Romano
1½ c. North Country Smokehouse Smoked Ham, diced
Sea salt and fresh ground peppercorns to taste
1 tsp. garlic powder
2 tsp. dried mustard powder
½ tsp. cayenne pepper
Buttered cracker crumbs (2 sleeves of Ritz crackers and ½ c. melted butter mixed together)

Directions:
Directions:
Melt the butter in a large saucepan over medium heat and sauté onions until soft.
Whisk in flour, cook, stirring constantly until smooth and thickening begins.
Gradually whisk in milk and evaporated milk. Continue whisking and cook for 5 minutes so it thickens.
Add and stir the cheeses, ham and seasonings.
Add cooked pasta and mix well.
Pour into a greased large oblong pan or two 11" x 9" baking dishes.
Top with buttered cracker crumbs.
Cook in a 350º oven for 45 minutes.
