Ingredients:	Ingredients: 2 T. butter 2 apples, peeled, cored and diced 2 T. brown sugar 1/2 tsp. cinnamon 1/3 cup maple syrup 3/4 cup milk 1-1/2 T. vinegar 1 cup flour 3 T. sugar 1-1/2 tsp. cinnamon 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 large egg, beaten 2 T. oil

Directions:	Directions: Place butter, apples, brown sugar and 1/2 teaspoon cinnamon in a medium saucepan. Stir over medium heat 3 to 5 minutes until apples are very tender. Stir in syrup. Set aside to serve with pancakes. Whisk together milk and vinegar. Set aside for 5 minutes. Whisk together flour, sugar, cinnamon, baking powder, baking soda and salt. Whisk egg and oil into milk mixture. Add wet ingredients to dry ingredients and stir until just combined. Do not over mix. Cook pancakes like any other pancakes. Serve with warm apple topping and extra maple syrup, as desired.
