1 3-5# chuck roast
3# Yukon Gold or similar potatoes peeled and quartered or so
1 whole Yellow onion diced
2 stalks celery chopped
carrots peeled and cut to 2-3" lengths
mushrooms
can of beer

sear roast by placing in hot skillet with olive oil (or bacon grease) and brown all sides. You don't have to sear, but I think it is worthwhile and adds something to the final product.

place all items in crockpot and cook on low for 6-8 hours putting meat in first, then potatos around and over the roast, then carrots, celery, onion and onion mix. Finally pour 1/2 can of beer in, drink the rest.

This can also be done in a dutch oven. Just sear in the DO then deglaze with the beer. Put the meat back in and layer the rest as above. Cook on 250 for 6 hours or 350 for 4. Time will vary depending on the pan and size of meat, when meat pulls apart easily with a fork it is done.
