1 large diced tomato
1 bunch of green onions, about 5, chopped
2/3 cup chopped cilantro
1 can of shoe-peg corn drained (white or yellow)
1 can of black eyed peas, drained
1 can of black beans, drained
2 avocados diced (add just before serving)

Dressing:
¼ cup olive oil
½ cup red wine vinegar
2 cloves garlic, minced
⅛ tsp black pepper
1 tsp salt
1 tsp cumin

Directions:
Directions:
Make dressing first. Set aside.

Mix together ingredients for dip. Add avocados just before serving. Toss with dressing. I usually put on 2/3 of the dressing. Store in refrigerator.

Can be served as a side salad, or as a dip with tortilla chips.
