1 tbsp. olive oil
1/3 cup rice wine vinegar
1 tbsp. honey
4 tbsp. soy sauce
2 bunches baby bok choy, washed and sliced
1 bunch green onions, sliced
1 carrot, sliced thinly or into matchsticks
1 cucumber, peeled and chopped
2 tsp. sesame seeds

Directions:

Whisk together olive oil, vinegar, honey and soy sauce.

Combine the bok choy, green onions, carrots, cucumbers. Toss with dressing and sesame seeds. Serve right a away.

I have added other greens to this salad as well. It tastes good with thinly sliced cabbage or kale. You can also add chopped almonds and/or cashews.
