You can roast many vegetables, mix and match to your tastes, but remember that softer and smaller things like squash, asparagus and onion will cook faster than potatoes and carrots, so plan accordingly.

Cauliflower
Brussels sprouts
Carrots
Rutabaga
Parsnip
Eggplant
Zucchini
Artichoke
Potato
Garlic

toss with olive oil and your choice of seasoning I like to toss everything in a ziplock and shake it up. Experiment with flavored OO and different seasonings.

This is a great way to enjoy denser root vegetables and you can do it year round in the oven or on the grill or over a campfire.

Oven should be set to 450, arrange on a flat baking sheet. (put a piece of foil down to expidite cleanup)
