2egg or ground up Flex seed
2 cups suger
3/4 applesauce or vegetable oil
2 teaspoons vanilla
2 cups all purpose flour
2 teaspoons cinnamon
1 1/2 teaspoons baking soda
1/8 teaspoons salt
4 cups peeled chopped tart apples
1cup chopped walnuts
1cup raisins optional

Bake in a 350 F oven ,in a parchment paper lined baking pan 9x13 or Grease and flower a pan.
Combine egg/ flex seed , suger, oil/ applesauce and vanilla beat until light and fluffy . If using flex seed it my not get the light and fluffy. Just make sure you tell makes good .
combine flour cinnamon baking soda and salt to mixture blend-well . Add apples raisins and walnuts blend well pour into baking pan spread . Bake for 40 to 45 minutes. Check for doneness take toothpick inserted in the center if it comes out
Clean /mostly clean the cake is done.
If using a dark pan The cake will look darker. I would put the temperature at 325 F .this my make the cooking time longer. If using a glass pan shorten the time to 30 to 35 minutes .

This is a really good cake to make in the fall when the weather is getting cold outside and it also leaves a nice smell of apples and cinnamon throughout your house. Good served warm or cold if serving it warm vanilla ice cream would go nice with it . It's also good by itself. You can use the flex seed the apple sauce and the parchment paper to take some of the calories away from this cake to make it a little healthy. Or to make it gluten-free use gluten-free flour in place of regular flour .
