Garlic Infusion Rub:
6 cloves of garlic, minced
¼ cup grainy Dijon mustard
2 tbsp chopped fresh rosemary
2 tbsp olive oil

Rub beef all over with salt and pepper and this rub before roasting

Allow 3 servings per pound of bone in roast, 4 servings per pound for a boned roast

Cooking temperature is 325°F

For medium rare: Cook for 22 minutes per pound. Internal temperature on the meat thermometer should read 140°F (60°C)

For medium: Cook 25 minutes per pound. Internal temperature on the meat thermometer should read 155°F (68°C)

For Well Done: Cook 30 minutes per pound. Internal temperature on the meat thermometer should read 165°F (74°C)
