1 cup all purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 beaten egg
1 cup buttermilk -see tip
2 tablespoons cooking oil

TIP - add 1 tablespoon of lemon juice per cup of milk to sour it if you don't have buttermilk. Let mixture stand 5 minutes before using.

1. Combine the flour, sugar, baking powder, baking soda, and salt.

2. Make a well in the center of the flour mixture, set aside

3. Combine the egg, buttermilk, and oil.

4. And the egg mixture all at once to the flour mixture.

5. Stir just until moistened, batter should be lumpy.

6. Add additional milk to thin batter, if necessary.

7. Pour or spread about 1/4 cup of batter onto a hot lightly greased griddle or skillet.

8. Cook over medium heat about two minutes on each side or until pancakes are golden brown, turning to second sides when pancakes half of the lease surfaces and edges are slightly dry.

These freeze well. I sometimes make a double batch, freeze the leftovers. I reheat them in the toaster, that way they don’t get soggy!
