1 head cauliflower
2 T olive oil
2 T butter
½ cup Frank's Red Hot
1 pinch salt
1 head iceberg or bunch sweet butter or romaine lettuce
3 stalks celery
½ cup crumbled blue cheese

Directions:
Directions:
Preheat over to 450°F. Chop the cauliflower in small 1-inch florets, minimizing the amount of stem and removing the core. Place chopped cauliflower in a medium bowl, drizzle with the oil, season with the salt, and toss to combine. Place on baking sheet and spread in an even layer, roast until browned and tender but still crisp, approximately 10-12 minutes

Meanwhile, thinly slice the celery for your wraps. Whisk the hot sauce and butter in a medium saucepan over medium heat until warmed through. Remove the pan from the heat. When the cauliflower is ready, transfer it to the saucepan and stir to coat in the sauce. Divide the cauliflower mixture over the lettuce leaves, top with the celery and blue cheese, and serve.
