1 tbsp olive oil
1 cup yellow onion, chopped
2 stalks celery, chopped
1 lb. cubed beef
1 cup tomato paste
1 can (14.5 ounce) diced tomatoes
1 can (28 ounce) crushed tomatoes
2 diced and peeled potatoes
½ cup BBQ sauce
1 16 ounce bag frozen corn
1 10 ounce bag frozen lima beans
1 clove garlic, minced
1 bay leaf
1 22 ounce box vegetable broth
1 cup chopped carrots
1 cup mushrooms

Combine all ingredients into slow cooker, cook on low for 6-8 hours.
