6 ounces cream cheese
2 tablespoons orange marmalade or apricot preserves
1 teaspoon finely chopped crystallized ginger
1/8 teaspoon nutmeg
1/4 cup chopped and toasted almonds
6, 1 1/2 inch slices French bread
4 eggs
1 cup milk
1 teaspoon vanilla
1 recipe orange sauce

Directions:
First, bake the almonds for 8-10 minutes at 350º. Stir once or twice until golden.

Grease large baking dish (9"x13"). Beat cream cheese, marmalade, ginger, and nutmeg. Stir in toasted almonds. Cut a pocket in each slice of bread and spread cheese mixture inside. Put in baking dish. Beat eggs, milk and vanilla and slowly pour over top; cover and chill overnight. The next day, bake, uncovered, at 350º for 30-35 minutes. Serve with *orange sauce.

*Orange sauce:
Heat together 1/2 teaspoon finely shredded orange peel, 1/4 cup orange juice, 2 tablespoons honey, and 4 teaspoons cornstarch. Cook and stir over medium heat until thick and bubbly, then cook for 2 minutes more.
