1/2 cup raw barley, cooked
1 tablespoon butter
4 cups chicken stock
1 teaspoon tomato sauce
1 teaspoon salt
1 bay leaf
8 ounces mushrooms
1 medium carrot, diced
1 1/2 teaspoons dried dill weed
1/4 teaspoon pepper
1 medium stalk celery, diced

Directions:
Directions:
Bring raw barley and one cup of water to a boil. Cover and simmer for 20 minutes.

Sauté onion, salt, bay leaf and butter. Add celery and carrot and cook for 5 minutes. Add all remaining ingredients plus cooked barley.

Lower heat, cover, and simmer for 1 1/2 hours. Add water if necessary. Top with any and/or: sour cream, toasted sunflower seeds, grated hard boiled eggs, or fresh chopped parsley.
