8 lg(3 cans diced potatoes, drained)
1 onion, finely chopped (i used food processor)
1 lb. cubed velveeta cheese
milk
½ lb. bacon, crispy and crumbed
salt and pepper

Directions:
Directions:
Peel and cube potatoes (or drain cans). Boil potatoes and onion. Drain off water until potatoes are just covered with water, leaving a little of the onion. Add cubed veleeta cheese, add ½ c. of milk (more if needed to get right consistency). Add bacon, salt, and pepper to taste. Do all this while soup is simmering. That's it!
