2 medium onions, chopped
1 clove garlic, minced
2 cups uncooked brown rice
2 cups water or chicken broth
1 cup tomato puree
1 Tbsp minced parsley

Directions:
Directions:
Heat heavy skillet over moderate flame, add rice, stirring frequently to toast rice slightly. Meanwhile, bring water or chicken broth and puree to a boil in a separate pan, then carefully pour all of the liquid mixture over the rice. Mix in onion, garlic and parsley. Cover and turn heat down very low; let cook without lifting cover for about 40 minutes or until all liquid is absorbed.
