2 tbsp. corn starch
1tsp. salt
½ tsp. dry mustard (optional)
¼ tsp. pepper
2 ½ c. milk
2 tbsp. margarine
8 oz. american or shredded cheddar cheese (about 2 c., divided)
8 oz. elbow macaroni, cooked 6 minutes, drained

Directions:

In a medium saucepan combine cornstarch, salt, dry mustard, and pepper; stir in milk until smooth. Add margarine.
Stirring constantly, bring to boil over medium heat and boil one minute. Remove from heat. Reserve ¼ c. of cheese for topping. Stir in remaining cheese until melted. Add elbows. Turn into greased 2 qt. casserole dish. Sprinkle with reserved cheese. Bake uncovered at 375º for 25 minutes or until hot and bubbly.
