6 medium potatoes, parboiled & grated
¼ cup butter
1 (10¾ oz) can cream of chicken soup
1 pint sour cream
¼ cup chopped green onions
1½ cups shredded sharp cheddar cheese
⅓ cup crushed cornflakes
2 Tbsp butter, melted

Directions:
Directions:
Parboil potatoes until tender; cool. Peel and grate. In a saucepan, heat butter with soup. Remove from heat, blend in sour cream, onions & cheese. Stir in grated potatoes. Spread in a 9X13-inch baking pan. Mix crushed cornflakes with melted butter and sprinkle over casserole. Bake at 350º for 45 minutes. Serves 8.

Tips: 2 pounds frozen shredded hash browns can be substituted for the fresh potatoes. Breadcrumbs can be substituted for the cornflakes. PAM the baking pan!
