1 honey crisp apple
1/2 c. shelled, chopped pistachios
3 T. chopped crystallized ginger
1/4 c. apple cider vinegar
1/4 c. extra virgin olive oil
1/2 tsp. ground ginger
1/2 tsp. salt

Directions:
Directions:
Trim and cut celery into thin, 2-inch pieces. Thinly slice apple. In a large bowl, whisk oil, vinegar, ground ginger, and salt. Add celery, apple, pistachios, and crystallized ginger. Toss to combine.
