12 ears fresh sweet corn - shucked and kernels stripped from cobs
1/4 cup butter
1 1/2 tsp salt
1/4 - 1/2 tsp black pepper
1 - 2 cups water depending on how much corn juice you have from the corn

Directions:

Shuck corn and rinse cobs. Cut corn off the cobs with a sharp knife or a vegetable slicer into a large bowl. This should make about 4 -5 cups of corn. Do not drain. Add butter, salt, pepper, and water Cook in a pressure cooker according to directions or a sauce pan until tender. Don't overcook. Corn should still be slightly crunchy.

Jenola (Original Mimi) made this dish frequently, and it was a favorite of my children and now my grandchildren. Even when the children had braces or were missing baby teeth, they could eat this dish! A lot depends on how fresh the corn really is, when it was harvested, and how long it had to travel. The best corn is locally grown and can usually be found in a Farmers Market.
