Chili Recipe

3 tablespoons olive oil
2 cups onion, finely chopped
2 cloves garlic, chopped
1 green pepper, chopped
1 pound ground round
1/2 pund ground pork
3 tablespoons chili powder
1 - 16 ounce can tomatoes
1 cup beef stock
1/2 teaspoon celery salt or seed
1 teaspoon ground cummin
pinch of oregano
1/2 teaspoon cayenne pepper
1 small bay leaf
1/8 teaspoon basil
1 1/2 teaspoons salt
1 teaspoon sugar
2 - 8 ounce cans pinto beans, drained

Heat oil in large saucepan and cook onions, garlic and green pepper until wilted. Add meat and cook until meat has lost its red color. Combine chili powder with this mixture. Add tomatoes and half of the beef stock, then all the remaining spices, sugar and salt. Cook one to two hours, stirring occasionally. If necessary, add remaining beef stock. Stir in beans and serve.
