Pastry Crust for 2-crust pie
6 to 8 apples peeled and sliced
1 Tablespoon lemon juice
1 cup sugar
3 tablespoons flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspon salt
2 Tablespoons butter

Directions:
Directions:
1. Prepare a 9 inch pie shell: roll out remaining pastry for top crust. Set aside.
2. Wash and peel apples and slice thinly. Drizzle with lemon juice.
3. Toss lightly with mixture of sugar, flour, cinnamon, nutmeg and salt.
4. Turn mixture into unbaked pie shell. Dot apples with butter. Complete as for a 2-crust pie.
5. Bake at 450ºF 10 minutes; reduce oven temperature to 350ºF and bake about 40 minutes, or until crust is lightly browned and filling is bubbling.

I have made hundreds of these apple pies. A family favorite with apples from our tree. Sometimes I like to mix up a variety of apples into one pie.
