1 medium pumpkin cooked and pureed
1 recipe pastry for 9" single crust pie
2 eggs
1 12 oz can evaporated milk
1 cup brown sugar
1 tsp cinnamon
½ tsp salt
½ tsp ground ginger
¼ tsp ground cloves

Directions:

Preheat to 425º
Combine the sugar, salt and spices. Beat eggs in a large bowl and add the sugar mixture. Add pumpkin puree and stir until blended. Mix in evaporated milk gradually. Pour into pie crust shell.

Place aluminum foil around the pie crust, so not to burn crust.

Bake at 425º for 15 minutes and turn down the oven to 350º for 40-50 minutes. 10-15 minutes before pie is done, remove the foil to brown the crust. Pie is cooked when fork inserted in center comes up clean.
