Italian Beer Batter Fried Fish Recipe

2 lbs. fresh fish, I like cod
1 bottle of your favorite beer, opened until it goes flat (a couple of hours)
1 1/2 C flour
3 T grated Parmesan cheese
1 T chopped parsley
1 tsp. garlic salt
black pepper to taste
1T olive oil
2 egg yolks, slightly beaten
2 egg whites, stiffly beaten

Directions:
Directions:
Mix beer with all of the other ingredients, except egg whites. Beat egg whites until they forms stiff peaks (this takes a while). Fold in egg whites. Cut fish into serving pieces. Preheat frying oil to 375º. Dip fish in batter and deep fry until golden brown (about 5 minutes). Only fry 2 pieces at a time to prevent the oil from dropping in temperature.

Make your own tarter sauce with about a cup of mayo, 1T sweet pickle relish, a squirt of yellow mustard, and salt to taste.
