1 C dry pinto beans, soaked in water overnight
1/C dry kidney beans, soaked in water overnight
1 sweet bell pepper, diced
1/ sweet onion, diced
1 C brown rice
1/3 C sliced carrots
1/4 C taco or Picante sauce
1 bone-in pork chop, diced; or ham hock
4 C chicken stock
2T EVOO
1T cider vinegar
1 t minced garlic
1 tsp Emeril's cajun seasoning
2 tsp salt
1 tsp black pepper

Directions:
Directions:
I used an Instant Pot
Drain & rinse beans
Saute onion, pepper, pork in the EVOO until the onion is translucent (4 minutes)
Add garlic & saute for 1 minute
Add everything else and stir well
Into the Instant Pot 25 minutes on high
That's it...simple!
