Pork roast- any size. I use the cheapest cut as I cook it to pieces.
Brown flour for gravy
salt and pepper to taste

Preheat oven 350º.
Put roast in roasting pan- fat side up. Add enough water to cover the bottom of the pan. (Just enough so that the roast does not stick to the bottom of the pan.) You may need to add more as it cooks.

Cover and bake for about 30 minutes a pound. Remove pan from over and turn roast over and reduce heat to 325º - add water if needed. Cove and cook for at least 30 more minutes a pound.

I cook the roast a long time, because I want it to fall apart. Remove roast from pan.
Add brown flour, salt and pepper to make gravy. Remove excess fat from drippings if needed.
