1 pound ground beef
½ cup chopped onion
2 cans (14.5 ounce) Italian stewed tomatoes
2 cans (10.5 ounce) beef broth
1 can Mexicorn, drained
1 can cut Italian beans, drained
1 teaspoon oregano
¼ teaspoon pepper
1 cup whole wheat medium egg noodles, uncooked

Directions:
Directions:
Brown beef and onion. Drain. Add tomatoes, broth, corn, green beans, and seasonings. Bring to a boil. Add noodles. Cover and remove from heat and let set until noodles are done (10-15 minutes).

I have used chicken broth from boiling a chicken and broth cubes.

Many years ago, I found this recipe in the Austin paper for someone after surgery. I have adapted the recipe to include vegetables that I like. Also, it has been consumed by many friends after surgery. This was one of my husband's favorite soups.
