Ingredients: 1 lb ground turkey 2 cups picante sauce, divided 1 ( 10 oz) box chopped spinach,thawed and squeezed 2 tsp ground cumin, divided 1/2 tsp salt (8 oz) block cream cheese, cubed 10 taco-size flour tortillas 1 (14 oz) can diced tomatoes 2 cups shredded Mexican blend cheese

Directions:1. Preheat oven to 350º 2. Cook ground meat in a large skillet until browned and crumbly; drain 3. Add 1 cup picante sauce, spinach, 1/2 tsp cumin and salt 4. Stir and cook 5 minutes or until most of the liquid has evaporated 5. Add cream cheese and stir until melted 6. Warm tortillas according to package directions7. Spoon 1/2 cup meat mixture into each warmed tortilla 8. Roll up and place steam side down in a lightly greased 9X13 inch baking dish 9. Combine tomatoes, 1 cup picante sauce, and 1/2 tsp cumin; Mix well 10. Spoon over enchiladas 11. Bake 20 minutes 12. Top with shredded cheese and return to oven until cheese melts, about 5 minutes |
