1 lb ground turkey
2 cups picante sauce, divided
1 ( 10 oz) box chopped spinach,thawed and squeezed
2 tsp ground cumin, divided
1/2 tsp salt
(8 oz) block cream cheese, cubed
10 taco-size flour tortillas
1 (14 oz) can diced tomatoes
2 cups shredded Mexican blend cheese

1. Preheat oven to 350º
2. Cook ground meat in a large skillet until browned and crumbly; drain
3. Add 1 cup picante sauce, spinach, 1/2 tsp cumin and salt
4. Stir and cook 5 minutes or until most of the liquid has evaporated
5. Add cream cheese and stir until melted
6. Warm tortillas according to package directions7. Spoon 1/2 cup meat mixture into each warmed tortilla
8. Roll up and place steam side down in a lightly greased 9X13 inch baking dish
9. Combine tomatoes, 1 cup picante sauce, and 1/2 tsp cumin; Mix well
10. Spoon over enchiladas
11. Bake 20 minutes
12. Top with shredded cheese and return to oven until cheese melts, about 5 minutes

Try as I might, I can't get the tortillas to roll up properly, but Jennifer's always roll up perfectly! This is one of my favorite Mexican dishes and requested by the rest of the family as well.
