3 cups flour
1½ teaspoons baking soda
½ teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon salt
2 eggs
1¼ cups vegetable oil
2 teaspoons vanilla extract
2 cups granulated sugar
3 cups chopped apples
1 cup chopped nuts of your choice

Directions:
Directions:
Sift together flour, soda, cinnamon, nutmeg and salt. In a mixing bowl, beat together the eggs, oil (I use Wesson), vanilla and sugar. Add flour mixture to egg mixture. Add apples (Granny Smith works great), and nuts (I use pecans).

Pour into greased and floured bundt pan and bake at 350º for one hour. Reduce heat to 325º and cook for an additional 15 minutes.

This is one of two recipes that mean Christmas in our family. We would travel to Cooper in northeast Texas to visit my husband's grandparents each Christmas and the house would be full of homemade candy, bars and cakes. I was blessed with the recipes and carry on the tradition in our home now. The recipes are well loved.
